Abstract

Several studies have shown that food stores and their availability of healthy products are important contributors to healthy eating patterns among consumers. The thesis addresses three types of strategies for food retailers to promote healthier eating among their customers: product pricing, choice architecture and product reformulation. By means of literature review, econometric analyses of retailer sales data and household purchase data, in-store interviews with consumers and economic optimization modelling, the thesis investigates the potentials of these strategies in promoting healthier consumer choices.
