A comparative survey of change and stability in eating patterns

This project investigates the everyday eating practices of four Nordic populations. How do people in Denmark, Finland, Norway and Sweden organise their daily eating? The aim is to understand modern living in more depth and to find out whether eating today is highly individualised largely neglecting old habits and norms regarding proper eating – or, whether these traditions still prevail.

The aim is to understand modern living in more depth and to find out whether eating today is highly individualised largely neglecting old habits and norms regarding proper eating – or, whether these traditions still prevail.
The study of change and variation in food habits is an entrance to explore wider social themes, such as how modern living is structured by time rhythms and organisation of society, how social relations are coordinated, how identity is reflected in daily consumption, how norms may differ from practices and how men and women differ with respect to daily habits and routines.
Current structures and emerging patterns in food purchase (e.g., convenience food), domestic food preparation, and eating away from home are critical not only for the development of new food products or service systems but also for public policies addressing both health and environmental issues.
The project will investigate the acquisition, preparation, timing, presentation, location, companionship, and selection of food using survey methodology including representative samples of four Nordic populations.
In addition, the study aims at methodological development to capture trends and social variations in eating patterns over time. It will link up to an earlier Nordic study from 1997, and thus offers a unique opportunity to study social change within a central area of contemporary consumption.
Projektet undersøger hvordan hverdagens spisning finder sted i fire nordiske lande. Hvordan organiserer folk i Danmark, Finland, Norge og Sverige deres daglige spisning? Formålet er nå dybere i forståelsen af det moderne liv og at undersøge om spisning i dag først og fremmest er en individuel affære, som stort set ignorerer gamle vaner og normer– eller, om traditionelle praksis’er fortsat er levende.
Studiet af forandring og variation i madvanerne er også en indgang til at undersøge bredere sociale temaer, som fx hvordan det moderne hverdagsliv er struktureret ift samfundsmæssige tidsrytmer og organiseringer, hvordan sociale relationer koordineres, hvordan identitet afspejler sig i daglige forbrugsmønstre, hvordan normer forholder sig til faktisk praksis og hvordan mænds og kvinders daglige vaner og rutiner evt. er forskellige fra hinanden.
Aktuelle strømninger i fødevareforbruget (f.eks øget brug af hel- og halvfabrikata, madlavning i hjemmet og udespisning) er vigtige spørgsmål ikke bare ift udvikling af nye produkter og service systemer men også for politik som retter sig mod sundheds- eller miljø spørgsmål.
Via en survey blandt repræsentative udsnit af fire nordiske befolkninger vil projektet undersøge mønstre og sammenhænge i indkøb, madlavning, tid, sted og sociale sammenhænge for spisningen, samt hvilken mad der spises.
Projektet sigter desuden på at udvikle forskningsmetoder, som kan indfange udvikling og sociale forskelle i spisemønstre over tid. Det knytter sig til en tidligere nordisk undersøgelse fra 1997, og giver derfor en unik mulighed for at studere social forandring indenfor et vigtigt forbrugsområde.
